Oatmeal apple muffins
A delicious breakfast (or anytime!) snack that’s low in fat and cholesterol, but high in flavor.
Ingredients:
- 1/4 cup egg substitute
- 2/3 cup whole wheat flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 cup nonfat milk
- 1 cup raisins
- 1 apple, peeled, cored and chopped
- 1/4 cup natural, unsweetened applesauce
- 2/3 cup rolled oats
- 4 Tbsp. Splenda® Brown Sugar Blend
Instructions:
Preheat oven to 400°. Beat egg substitute. Sift together flour, baking powder, cinnamon and nutmeg. Combine all ingredients, mixing just enough to moisten. Spoon the batter into muffin cups until 3/4 full. Bake for 15-20 minutes.
Yield: eight muffins.
