Homestyle sweet potatoes
Ingredients:
- 6 cups sweet potatoes, peeled and cubed
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp. light salt
- 1/2 tsp. ground black pepper
- 1 tsp. ground cinnamon
- 1 tsp. Splenda®
Instructions:
Place sweet potato cubes in a glass dish with 1/2-inch water. Cover with plastic wrap. Steam sweet potatoes in the microwave on high for 4 minutes. Remove from microwave; drain and dry potatoes. Drizzle with olive oil. Sprinkle with salt and pepper to taste and bake in the oven on 400° until lightly crisp. Remove from oven and sprinkle with cinnamon and Splenda®.
